all right, LJ, I know some of y'all are closet bakers. Talk to me about baking mix recipes, aka make-your-own-bisquick.

Biscuits from scratch aren't that hard! You don't need no stinking mix. ;)

maybe I want to make more than biscuits, hmm?

Pancakes from scratch are not hard either.

Look, can we cut out the kitchen moralizing? I asked for a baking mix, not puffed snark. If you don't have a baking mix recipe to contribute STFU and STFD.

A moral person would have their own chickens so that the pancakes can be made with fresh eggs. Do you have chickens? I didn't think so...

If I really wanted to I could drive a couple roads over for some fresh eggs, but it's damn snowy out.

So, what links did you get? I'm curious. Maybe I want some of this mix too. For a friend or something.

Ok. All Bisquik is is a drop biscuit recipe that you add whatever else to make what you want. As I do not know your preferences, find a good drop biscuit recipe and mix the dry ingredients to spec, and measure the results. Then play with your resulting mix to do what you will. Use fresh ingredients for best results. BTB, there is a reason that most of us do not have a Bisquik type recipe, for myself, if I do not have the time to go and make it from scratch, and Bisquik will do the job, I use Bisquik. I find it easier to keep it around than trying to store my homemade mixes, one box, great versatility, less thinking when in a rush. This is not a snark, just my personal observation.

This is an important factor, and may well be the make-or-break point on whether or not you decide to forgo Bisquick in the future. The Master Mix recipe I linked you to on Twitter can be stored for a month, tops (something that never registered for me when I made it in 7th grade home ec, largely because we went through it all before that point).

...I am wondering why someone needs to make Bisquick? Buying it is easier and probably cheaper, or is my logic failing?

MAYBE I want to try a different blend? with different flour than bleached white? Or perhaps I'm feeling experimental? I have lots of reasons, quit questioning why.

Well that is different and makes sense. I will question because without questioning I would be wondering if Andee has finally gone off the deep end and is trying to bake herself into a weird pancake, biscuit thing of DOOM!

I might. But I wanted to know what other people used, and I have this baking powder I need to use up.
