Okay, note to self - next time I'm cripplingly depressed? tell me to go bake/cook something. It helps. Especially if it turns out pretty damn good.
Anyway I finally made some cotdamn cheese biscuits and they were delicious. Delicious like crack.
Preheat oven to 450. Combine all ingredients in a bowl. Turn out dough onto floured surface and knead for 1 minute. Pat or roll out to 1/2" thick. Cut out 2 1/2" rounds and lay on greased cookie sheet with edges touching. Bake for 12 minutes or until tops are golden.
While biscuits are baking combine in a small saucepan:
Remove biscuits from oven. Separate biscuits and liberally coat tops and sides with butter glaze. Let dry.
If desired (and extra cheesy goodness is always desired), sprinkle additional cheese on top of each biscuit. Set under broiler until cheese melts/crisps.
Makes about 8-9 biscuits. Serve hot. Nom.
The hardest thing about making these frankly, was grating up all the cheese. A cup and a half is a LOT of grating. Serves me right for wanting to use extra sharp cheddar. And you know, not wanting to spend extra on a package of shredded. Totally worth it though. But yeah, if I didn't have to stand there and grate cheese, this would have taken me a grand total of half an hour to whip up.
But yeah, now you know why I wanted to know the components of bisquick a couple weeks back. I wanted to be able to adapt the recipe from here to possibly accomodate whole wheat flour, but today I didn't have any and I needed to bake and eat stuff.
I may reprise these for Super Bowl next weekwhich brings me to my next topic: Superbowl at The Great Race War next Sunday. Bring noms, and if not game spirit, a willingness to make fun of expensively bad commercials and men playing grabass. Whoops. Looks like house McGurk/McElroy are hosting this year.

- 1 cup shredded/grated cheese. Grate/set aside an additional 1/4-1/2 cup for garnish if desired.
